A few steps from the Place de la République, in a spacious and cheerful setting, we settle in with the intuition that things will go well. The snail ravioli arrive in a hot bowl, in which we quickly dip our fork, knowing that we can quietly savor this dish that surprises with its melting texture and delicate flavors. The lamb is served in the form of a "snacked" brick: we break the object apart with the corner of the fork. The meat crumbs are stuffed with flavors. Jubilation. As for the mille-feuille, its genius lies in its lightness. Meal accompanied by a superb Mercurey whose name I would like to find again.
