Hybrid, friendly, and inventive, Habile. is an eco-conscious table, an ethical clothing collection, and a wine cellar dedicated to the winemakers of tomorrow. Thomas Clouet, who organizes it, presents his new discoveries and favorites alongside the monthly changes of Chef Eric Fontanini's menu.
For this month of May, he has chosen to tell us about the values of two organic cuvées from Domaine Jean-Claude Lapalu: Ce Blanc, 2022 and Eau Forte, 2021. One of our favorite winemakers, Jean Claude Lapalu.
First, let's start with a little introduction:
He heads a little over 12 hectares of vineyards, located in Saint-Etienne-la-Varenne at the foot of Mont Brouilly. In the heart of Beaujolais, he works without chemicals, whether on the vines, the soil, or in the cellar.
In short, he respects nature and its terroirs!!!!
And the best part is that year after year, he blesses us with superb wines with CONSISTENCY!!!!

For the month of May, we are pleased to introduce our new white wine cuvée called simply 'Ce Blanc' from 2022, a 100% Chardonnay (which rivals Burgundy white wines at a much more affordable price...) with aromas of white fruits, a wine that is both indulgent and exceptionally fresh. 'Thomas'
This cuvée will beautifully accompany our Normandy trout tartare with celery, confit shallots & trout roe, or our yellow hen stuffed with a potato cake and morel cream.
'We are also lucky to have an emblematic cuvée from his estate, 'Eau Forte' from 2021.' 'Thomas'
A 100% Gamay from 45-year-old vines planted on granite soils, from the site called Les Quatre Croix.
This cuvée will beautifully accompany our Normandy trout tartare with celery, confit shallots & trout roe, or our yellow hen stuffed with a potato cake and morel cream.
'We are also lucky to have an emblematic cuvée from his estate, 'Eau Forte' from 2021.' 'Thomas'

'This wine is a gem of elegance and finesse with its notes of red berries and floral aromas.' Thomas
A wine that's easy to drink (it lives up to its name), recommended to pair with one of our ham platters to start a meal, or to enjoy during the afternoon at around 4 PM with our Croque Monsieur made with Tomme de Bray and Burgundy ham, or our Pork pâté en croûte with vegetables and pistachios.

To conclude,
We are increasingly enjoying working with the winemakers of Beaujolais because it is a beautiful wine region that has unfortunately been neglected by some winemakers (we won't name names, but I'm sure some come to mind...) who are more driven by greed than the pleasure of making good wines. Beaujolais is certainly one of the finest wine regions in France, with exceptional winemakers, and we at Habile believe that Jean Claude Lapalu is one of them!!!!!
So come and discover and taste it, always in moderation... or not... all day long and well into the night, from Tuesday to Saturday, at the corner of Rue de Lancry and Rue du Château d'Eau.
