At HABILE, we've activated the total sun mode and put on espadrilles. Summer is here and we've decided to make the most of it. On the menu, freshness and summer flavors. This month, bluefin tuna is served as carpaccio with a ginger vinaigrette and olive oil from the Domaine. Don't panic, the Breton blue lobster gyozas with tarragon & reduction and lobster bisque are still there. And the croque monsieur is back, as a starter, to prepare your summer body.
As for the main course, our trout tartare from Viviers de Vatierville, zucchini with goat cheese, is the essential to refresh yourself. Another new dish, the mussels from Croisic, flambéed with pastis, chorizo and fennel will transport you to the seaside with your feet in the sand.
And to finish in style, a plate of strawberries, raw cream and strawberry coulis will compete with a peach and verbena millefeuille & peach coulis.
This menu will be the last of the season because August rhymes with vacation at HABILE.
